Peak is the bourbon from WildRye Distilling, a small operation working out of Bozeman, Montana, and it drinks like a craft bourbon rather than a Kentucky warhorse. Expect a young, grain-forward profile: sweet corn and vanilla on the nose, then caramel, cinnamon and a run of toasted cereal across the palate, with new oak drying things out toward the back. The finish is medium and leans more clove than sugar, which keeps it from turning syrupy. Pour it over one big cube, or put it to work in a highball with ginger ale where that sweetness has somewhere to go.
