Ramsdell Parrot Dark is the dark rum from WildRye Distilling in Bozeman, Montana, a landlocked take on a Caribbean idea. Dark rum is the richer end of the category, where molasses and wood character sit forward instead of the crisp cane notes of a silver. The nose is brown sugar, ripe banana and vanilla; the palate brings toffee, baking spice and a little dried fruit; and the finish is warm and medium-length with a light char note running underneath. It has enough body to hold up in a stirred drink. Pour it into a dark and stormy, or sip it neat.
