The Grand Barrel is Wyoming Whiskey's single-barrel programme, and this white-label release comes from barrel 2707. The distillery sits in Kirby, Wyoming, mashing non-GMO grain grown by farmers in the Big Horn Basin with limestone water drawn from a deep well, then ageing in a high desert climate that swings hard between hot days and cold nights. That swing keeps pushing whiskey in and out of the wood. Expect vanilla, honeyed corn and dried apricot on the nose, a full palate of caramel, toffee and gentle baking spice, and a finish of warm oak. Neat, or one cube, and nothing more complicated.
