Zumbador Tequila Blanco High Proof is an unaged blue agave tequila bottled above the usual strength, which keeps more of the raw agave character in the glass. Nothing is lost to a barrel here; the extra proof simply carries the cooked agave, citrus oil and pepper further and holds them longer on the palate. The nose is bright with roasted agave and lime zest, the palate is oily and sweet with white pepper, green herbs and a mineral streak, and the finish is warm and dry with a lingering vegetal note. Sip it neat in a small glass with water on the side, or let it stand up to a margarita built on fresh lime.
