Glendalough Pot Still, Irish Oak Finish is a pot still Irish whiskey from Glendalough Distillery in the Wicklow Mountains, finished in slow-toasted 250-liter hogsheads made from Irish oak harvested under a sustainable forestry program that plants seven saplings for every tree felled. Using Irish oak rather than the American or French oak most whiskey ages in is unusual and gives it its own signature profile: sweet, citrussy aromatics with vanilla, caramel, banana and treacle against earthy, herbal oak spice, a chewy, buttery palate with toffee pear and toasted tannic oak, and a long finish of creamy vanilla, almond and forest fruit.
