Negro Mate Triple Ensamble is a mezcal built from three agave varieties distilled together, which is what ensamble means: the plants are roasted, fermented and run as one batch, so the blending happens in production rather than in the bottle. Ensambles tend to be more layered than a single-agave mezcal, with each plant contributing a different register. The nose is smoke, cooked agave and dried herbs; the palate moves through tropical fruit, citrus peel and mineral earth; the finish is long, dry and peppery. Pour it neat in a copita and give it a few minutes to open before the first sip.
