LNK Mezcal Espadín is made from espadín, the workhorse agave behind most mezcal and the one that shows the process most clearly. Espadín gives a mezcal that reads balanced rather than extreme, which is why it is where most people start and where plenty stay. The nose is roasted agave and wood smoke with green herbs behind it; the palate brings cooked sweet potato, citrus peel, black pepper and a clean mineral streak; and the finish is dry and smoky without ever turning ashy. Sip it neat at room temperature in a copita with an orange slice, or use it to bring smoke to a margarita.
