Negro Mate Mezcal Joven is unaged mezcal, bottled straight from the still so nothing stands between the agave and the glass. Joven is the traditional way mezcal is drunk in Mexico and the honest test of a distiller's work: hearts roasted underground, crushed, fermented openly and distilled small, with no barrel to smooth the edges. The nose is wood smoke, cooked agave and citrus; the palate runs sweet roasted fruit into green pepper and mineral earth; the finish is dry, smoky and long. Serve it neat and a little below room temperature in a copita, sipped slowly rather than shot.
