Espadin is the workhorse agave of mezcal production, fast-growing and widely cultivated, while Tobala is a slow-growing wild agave prized for a more floral, complex character, and this ensamble is built to combine the reliability of one with the nuance of the other. Both are traditionally pit-roasted before fermentation and distilled in copper stills, giving the mezcal its smoke. Expect smoke and cooked agave up front, with citrus, herbs, and a floral lift from the Tobala coming through on the palate. It's bottled joven (unaged), so nothing here is masked by wood.
