Aldez Mezcal Ensamble is a unique blend of mezcal made from a combination of agave Espadín, Tepeztate, and Tobalá. It is produced in the small village of San Juan del Río in Oaxaca, Mexico. The mezcal is made using traditional methods, including roasting the agave in an underground pit, crushing it with a horse-drawn tahona, and fermenting it in open-air vats.
