Aromatic Collins
The Aromatic Collins is a Tom Collins with a float of Amaro Nonino. Gin, lemon and sugar are shaken and topped with soda, then the amaro is poured on top so the first sips carry bittersweet orange and caramel before the drink opens up. A patio drink with more to say.

The Aromatic Collins is a modern recipe that starts from the Tom Collins, a 19th-century tall drink, and adds a layered amaro float. Floating a bitter liqueur on a highball is a modern bartender technique that adds aroma and a visual gradient.

Batching dilution
When you batch, there's no ice melting in a shaker, so you add the water yourself: 18% for spirit-forward drinks, 25% for shaken ones.
