Esprit Edouard is an absinthe superieure, the traditional French style built on grande wormwood, green anise and fennel rather than the sweetened imitations that filled the gap during the ban years. Absinthe superieure means it is distilled at high strength and coloured naturally with herbs, which is why it louches, or turns cloudy, the moment cold water hits the glass. Expect a nose of anise, fennel and dried herbs, a palate that opens herbal and faintly bitter before the anise sweetness arrives, and a long, cooling finish. Serve it the old way: one part absinthe to three or four parts iced water, poured slowly, with sugar only if you want it.
