Bardstown Bourbon Company Bottled-in-Bond is Kentucky straight bourbon made to the 1897 standard: one distillery, one distilling season, at least four years in a federally supervised warehouse, and bottled at exactly 100 proof. That last part is why bonded whiskey has stayed relevant, because it is a guarantee written into law rather than a marketing line. The extra strength gives the profile some spine: caramel, orange peel and vanilla on the nose, a palate of brown sugar, cinnamon and toasted oak, and a finish that runs long and warm with a dry oak tail. Neat with a splash of water, or the backbone of a serious old fashioned.
