Stellum is the Barrell Craft Spirits label built around blending mature sourced whiskey, and this is one of its single barrel selections, Lyra W1, bottled at cask strength from one cask rather than blended down to a house profile. Single barrels are the honest version of the format: nothing to hide behind, and no batching to smooth out an odd note. Expect caramel and orchard fruit on the nose, a palate of brown sugar, cinnamon, dark cherry and oak spice, and a long, hot finish that rewards patience. Pour it neat to start, then add water a few drops at a time and taste as it opens.
