The plata from Casa Don Ramón's Ceramic Collection is unaged blue Weber agave tequila from Jalisco, bottled clear and housed in a hand-finished ceramic decanter. With no barrel in the way, this is the most direct look at the distillery's spirit: cooked agave and citrus zest on the nose, then a palate of sweet roasted agave, green herbs, white pepper and a clean mineral streak, finishing crisp and peppery. Chilling it slightly tightens the whole thing up. Pour it neat as a sipper, or let it do the heavy lifting in a margarita or Paloma where the agave needs to stay audible.
