Castle & Key's Wheated Small Batch Bourbon comes from the distillery the company rebuilt on Glenn's Creek, west of Frankfort — a site that sat derelict for decades before being brought back. Wheat stands in for rye as the secondary grain, which softens the whiskey and pushes it toward sweetness rather than spice. The nose is vanilla, caramel and light oak; the palate is round and gentle, with honey, baked apple, cinnamon and a touch of cocoa; the finish is medium, warm and clean.
