Clear Creek Apple Brandy 8 Year is the long-aged version of the Oregon spirit that founder Steve McCarthy built the distillery around: local orchard apples, a pot still, and oak ageing modelled on Calvados. Eight years is where an apple brandy stops tasting like fruit alone and starts tasting like a mature spirit, with the wood doing as much talking as the orchard. Dried apple, toffee and warm oak on the nose; baked apple and caramel deepened by nuts and soft spice on the palate; a long, dry, gently tannic finish. Bottled at 80 proof. Drink it neat in a tulip glass after dinner, where it stands in easily for an aged Calvados.
