Copper & Kings Apple Brandy is a pot-distilled American brandy made from apples rather than grapes, produced in Louisville by a house that treats brandy with bourbon-country seriousness. Everything is distilled in copper pot stills, and the barrels rest in a cellar wired with subwoofers, the distillery's sonic maturation, meant to keep the spirit moving against the wood. Nothing is chill filtered, and no sugar or colouring goes in. Expect baked apple and cider spice on the nose, a palate of orchard fruit, caramel and dry oak, and a clean finish that stays fruit-forward rather than sweet. Sip it neat, or build a Jack Rose or a brandy old fashioned.
