Galar is a dry red from the 2021 vintage, imported by Cork & Bottle Imports. It drinks the way food wines are built to drink: fruit present but not showy, tannin firm enough to cut through fat, and acidity that resets the palate between bites rather than coating it. Expect black cherry, dried fig and a turn of pepper on the nose, a palate of dark berry fruit and savoury herb over grippy tannin, and a dry finish of medium length. Give it half an hour in the glass or a quick decant, then pour it with braised meat, tomato-sauced pasta, or hard cheese.
