Doc Holliday 10 Year Old is a bourbon carrying a full decade in the barrel, an age statement that has quietly vanished from most shelves as demand outran supply. Ten years in new charred oak is where bourbon stops being sweet and starts being layered: the wood pulls out water, concentrates the spirit and trades some of the corn sugar for tannin and spice. The nose gives dark caramel, dried cherry and seasoned oak; the palate runs brown sugar, tobacco leaf, clove and toasted nuts; the finish is long, dry and oak-driven. Pour it neat and leave it alone for a few minutes, or serve it over one large cube.
