Don Mateo De la Sierra Mezcal Artesanal Pechuga is made from wild spines and Peruvian pepper and is made from 100% certified organic agave. It is aged for a minimum of 12 months and is lightly sweet with complex herbal and citrus notes on the palate. The pechuga (chicken breast) used is the breast of a rooster with its wings still attached. It is said to impart a unique flavor to the mezcal and create a more balanced product.
