El Jolgorio Cuixe Mezcal 750 ML

El Jolgorio Cuixe is a single-agave mezcal from Oaxaca, produced by the Cortes family from agave cuixe, a karwinskii variety that grows tall and thin with the pina sitting high on the stalk rather than at the ground. Each release is a small, batch-specific bottling from one maestro mezcalero: agave roasted in an earthen pit, milled, fermented in open wood and distilled to proof rather than cut down with water. The nose is smoky and mineral; the palate is dry and savoury with green pepper, wet stone and a saline streak; the finish is long, herbal and gently ashy. Drink it neat at room temperature in a copita, slowly.
