Carlos Camarena ages the añejo nine months in ex-bourbon barrels, then rests it four more in barrels emptied of Laphroaig 10-Year-Old, letting the peat and brine of Islay settle into the agave. Because it's bottled one barrel at a time, each release reads a little differently. The aroma carries citrus, pineapple, and berries over oak, cooked agave, leather, and smoke; the palate runs through roasted pepper, maple, caramelized pineapple, and a savory streak of barbecue, bacon, and sea salt.
