Fidencio Clasico is the everyday espadin mezcal from Fidencio, distilled in Santiago Matatlan, the Oaxacan town that calls itself the world capital of mezcal. It is made the traditional way: agave roasted in a pit lined with hot stones, crushed, fermented in open wood and twice distilled in copper. Clasico is built to be the bottle you actually reach for rather than the one you save — smoke on the nose alongside roasted agave and green pepper, a palate of citrus, cooked fruit and a mineral streak running underneath, and a clean, dry finish. Drink it neat in a copita, or use it as the spine of a mezcal negroni.
