About this bottle
Fidencio Pechuga Anejo is a pechuga mezcal that has then been rested in oak. Pechuga is the ceremonial style: a finished mezcal is run through the still a third time with seasonal fruit, nuts and spices, and a raw poultry breast suspended in the vapour path, which strips harshness out and leaves a savoury richness behind. Time in wood softens it further and adds a sweet layer over the top. Expect baked fruit, warm spice and gentle smoke on the nose, a rounded palate of stewed fruit, cocoa and vanilla, and a long savoury-sweet finish. This is an after-dinner bottle — neat, room temperature, small pour.
