Fidencio Tequilana Mezcal 750ml

Fidencio Tequilana is made from agave tequilana, the blue agave used for tequila, but grown in Oaxaca and made as mezcal: roasted in an earthen pit and distilled in copper rather than steamed in an oven and run through a column. It is a direct answer to the question of how much of tequila's character comes from the plant and how much comes from the method, and the answer turns out to be mostly the method. The nose is cooked agave and smoke with a sweetness you will recognise; the palate is fruity and peppery; the finish is dry and warm. Pour it beside a blanco tequila and taste them together.
