Heartbeat Hot Rose is a rose with chile heat built in, released here with an updated taste. The idea is simple and works better than it sounds: rose already carries the acidity and cool red berry fruit that spice needs to sit against, so the chile reads as a slow warmth rather than a burn. The nose is strawberry and watermelon with a green chile lift behind it, the palate stays dry with berry fruit up front and heat building across the mid-palate, and the finish is crisp and warm at once. Serve it properly cold, and pour it with tacos, grilled shrimp or anything off charcoal.
