Heaven Hill Heritage Collection Aged 22 Years is the annual barrel-proof release that the distillery reserves for its oldest and best-tracked stocks. Twenty-two Kentucky summers is a long time to leave bourbon in wood, and the whiskey that survives it comes out dense rather than dried out: old leather, dark cherry and polished oak on the nose, then caramel, tobacco and dried fig on the palate under a heavy layer of oak spice, finishing very long and tannic. Bottled without cutting the proof back, it wants a few drops of water and a quiet room. Neat, in a glencairn, with nothing else competing for attention.
