Heavensake Junmai Ginjo is the house style in a small 300ml format. The project pairs a Champagne cellar master with Japanese breweries, and that background shows in how the sake is put together: blended for balance and aromatic lift rather than for a single brewery's signature. Junmai ginjo means pure rice with the grains polished well back before brewing, which is where the floral character comes from. The nose is white flowers, pear and steamed rice, the palate carries melon and green apple over a soft rice sweetness, and the finish is clean and delicate. Serve it lightly chilled in a wine glass, with sashimi or anything fried.
