Horse Soldier Liberty is a thirteen-year-old bourbon from American Freedom Distillery, the company founded by the Green Berets who rode into Afghanistan on horseback in 2001 — the bottle itself is moulded using steel recovered from the World Trade Center. Thirteen years is a long stretch for bourbon, and the wood shows its work: dark caramel, dried cherry and toasted oak on the nose, a palate of brown sugar, leather, baking spice and old oak tannin, and a long finish of char and drying spice. Age-stated bourbon at this level gets scarcer every year. Drink it neat, water optional, and give it time in the glass.
