Mocel Mezcal Artesanal Cupreata 2023 is an unaged mezcal built from agave cupreata, a wild-growing species native to Guerrero that needs the better part of a decade in the hills before it is ready to cut. The artesanal method behind it is old and slow: pit roasting over hot stones, milling, open fermentation in wood and distillation in small stills, with each vintage bottled as its own expression. The nose gives campfire smoke, damp earth and citrus blossom. Roasted agave, green pepper and a flash of tropical fruit follow, and the finish is long and dry. Pour it neat and give it a few minutes to open.
