Outlaw Distillery is a small Utah producer working out of Midvale, and this is their bourbon bottled at barrel proof — undiluted, straight from the cask, so the strength shifts from batch to batch. Skipping the water keeps the texture thick and the oak extract concentrated, which is exactly why people chase barrel proof in the first place. The nose opens on brown sugar, vanilla and toasted corn; the palate lands hot and sweet, moving through cinnamon, dark caramel and charred oak; the finish is dry, spicy and long. A few drops of water open it up considerably, so add them slowly. Drink it neat, or build an old fashioned that can stand up to a big cube.
