Solento Organic Tequila Raicilla 750ml

Raicilla is Jalisco's own agave spirit, distilled in the mountains and along the coast long before anyone wrote the tequila rules, and it drinks nothing like the tequila that shares the state. Solento's organic bottling is unaged, which leaves the agave raw and unpolished in the best way: roasted agave, damp earth and green fruit on the nose, then a herbal, faintly funky palate of cooked pineapple and pepper, finishing dry and mineral with a wisp of smoke. Anyone comfortable with mezcal will find this familiar but fruitier. Drink it neat at room temperature in a small clay copita, or beside citrus and salt.
