Cascahuin Tahona Blanco is a Valles-region blanco made entirely with the tahona — the two-ton volcanic wheel that crushes roasted agave slowly instead of shredding it, pressing out oils a machine would tear apart. Distilled at Destilería Cascahuin in El Arenal and confirmed additive-free, it bottles at a higher-than-usual 84 proof. The result is savory and mineral rather than sweet: white pepper, orange blossom, and green agave on the nose, then honeyed cooked agave, Meyer lemon, and a briny salinity on the palate. The finish runs long and faintly oily, agave and earth hanging on. This is a blanco for people who want texture and salt, so reach for it neat or in a mineral-forward Margarita.
