The Dalmore Luminary No. 2 is the 2024 release in the Highland distillery's annual collaboration series, a 16 year old single malt built around Dalmore's signature marriage of casks. The distillery sits at Alness on the Cromarty Firth, where flat-topped stills and a long habit of layering sherry wood over bourbon-matured spirit give the house its dense, fruit-heavy character. The nose opens on orange peel, dark chocolate and dried fig; the palate is thick with stewed fruit, coffee and cinnamon-dusted oak; the finish runs long, turning from sweet fruit toward soft leather. Serve it neat in a copita and give it ten quiet minutes before the first sip.
