The Lost Explorer Mezcal Reserva del Maestro 750ml

The Lost Explorer Mezcal Reserva del Maestro is a limited bottling from the brand's Oaxacan palenque, where maestro mezcalero Don Fortino Ramos works agave the traditional way: piñas roasted in a stone-lined earthen pit over wood, crushed by stone, fermented in open vats with wild yeast, and distilled in copper. That process is where the smoke comes from, which is to say it is cooking rather than flavouring. The nose is wood smoke, green herbs and citrus peel; the palate is soft and oily, with roasted agave, white pepper and a saline mineral streak; the finish is long and gently smoky. Drink it neat at room temperature, in small pours.
