Following traditional methods, the agave hearts are roasted in an underground pit oven, crushed, fermented in open wooden vats, and double-distilled in copper stills — a process that leaves the mezcal with a pronounced smoky character straight from the earthen roast. Bottled joven, or unaged, it shows that smoke alongside earthy, citrus, and black-pepper notes without any barrel influence softening the edges. This is a mezcal for drinkers who want the traditional style unfiltered by wood.
