Thomas S. Moore is a Bardstown-area label built around secondary wine- and rum-cask finishes rather than one flagship mash bill, and the Cabernet staves push this pour toward darker fruit and tannin, layering red-wine grip over the caramel and vanilla you'd expect from straight bourbon, with a drier, spicier close than an unfinished bottle would give. It suits bourbon drinkers who already like a finished whiskey and want something more savory than the usual sherry cask.
