Two Stacks Single Malt Double Barrel is an Irish single malt, meaning all malted barley from a single distillery, matured across two different cask types, which is where the name comes from. Splitting maturation lets a blender draw sweetness from one wood and structure from the other, then marry the two together before bottling rather than settling for whatever one barrel gave them. The nose is malt biscuit, apple and honey, the palate is rounder with vanilla, dried fruit and a light nutty oak, and the finish is medium length, dry and warmly spiced. Serve it neat in a Glencairn, with a small splash of water if the oak feels tight.
