Yéyo High Proof Blanco is the unaged expression from the Jalisco tequila brand, bottled above the usual strength so the agave arrives undiluted. Blanco goes from still to bottle without time in wood, which leaves nowhere for the distillate to hide: every decision made in the field, the oven and the fermentation tank shows up in the glass. The nose is cooked agave, lime zest and cracked black pepper with a mineral edge; the palate is oily and intense, sweet agave set against citrus and a clean vegetal bite; the finish is long and peppery. Sip it neat at room temperature, or make a margarita with real backbone.
