Artesanal is a legal production category rather than a marketing word: the agave is roasted in an earthen pit, crushed by mill or by hand, fermented in open wooden vats and distilled in small copper or clay stills, and that whole sequence is where mezcal's smoke and texture come from. The nose is wood smoke and orange peel over cooked agave; the palate is oily and bright, citrus set against roasted sweetness and a mineral edge; the finish is smoky and dry. Sip it slowly from a copita, neat and at room temperature.
