Halekulani

House Without a Key, Halekulani hotel, Waikiki

The Halekulani is bourbon, orange, lemon, pineapple, demerara syrup, grenadine and a dash of aromatic bitters, shaken and served up with a dehydrated orange wheel. It is a bourbon sour with tropical fruit, rich and balanced, with grenadine adding color and depth. A warm-weather drink that still suits Thanksgiving week.

History

The Halekulani cocktail comes from the House Without a Key lounge at the Halekulani hotel in Waikiki. It was originally made with okolehao, a Hawaiian spirit distilled from ti root. When okolehao disappeared, tiki historian Jeff "Beachbum" Berry proposed bourbon as the closest stand-in.

How are you making it? ⓘ Batching includes dilution water. Pre-batched cocktails need added water to replace the melt from stirring or shaking. We use Jeffrey Morgenthaler's standard: 18% for spirit-forward drinks, 25% for shaken.
