Niu Lan Shan Chen Niang is a baijiu, the Chinese grain spirit category that doesn't map neatly onto Western spirit types, produced by Niulanshan, a long-established Beijing-area distillery known for erguotou-style baijiu built on sorghum fermented with a wheat-based qu starter culture in a solid-state process very different from Western column or pot distillation. Chen Niang generally denotes an aged or extended-maturation style within the brand's range, giving it more depth than a young, sharp erguotou. Expect the pungent, fermented-grain intensity typical of baijiu, an acquired flavor profile for drinkers new to the category, softened somewhat by the added ageing.
