About this bottle
Palomo is an artesanal mezcal, which is a legal category rather than a marketing word: to carry it, the agave has to be roasted in a pit or masonry oven, milled traditionally, fermented in wood, stone or earth, and distilled in copper or clay. That process is where the smoke comes from — it is the roast, not an additive. The nose is woodsmoke and roasted agave with a green herbal lift; the palate is medium-bodied, showing citrus peel, black pepper and a flinty mineral streak; the finish is dry, smoky and lingering. Sip it neat from a copita with orange and sal de gusano, or give a margarita some backbone.
