Sal Divina Mezcal Espadin 750ml

Sal Divina Mezcal Espadin is an agave spirit made from espadin, the workhorse agave behind most of the mezcal on any given shelf and the variety that shows the category's smoke most clearly. Espadin matures in seven or eight years and roasts evenly, which is why it anchors so many mezcal lineups. The nose is wood smoke, roasted agave and green pepper. The palate is clean and mineral, with cooked agave sweetness, citrus peel and a gentle ash note running underneath. The finish is dry, smoky and medium-long. Serve it neat at room temperature in a copita, or use it where a blanco tequila would go and let the smoke reset the drink.
