Satryna Mezcal Artesanal Cenizo is made from cenizo agave harvested at fifteen years, a slow-maturing plant that spends well over a decade concentrating sugar before it ever reaches the roasting pit. Artisanal mezcal is roasted over hot stones under earth, crushed, fermented in open wood and distilled in small stills, a process that leaves smoke and minerality in the spirit rather than filtering them back out. The nose is wood smoke, wet stone and cooked agave. The palate is dry and herbal, with green pepper, citrus peel and a savoury earthiness. The finish is smoky, long and clean. Drink it neat in a copita, sipped slowly and never shot.
