Manhatta
Manhatta, Union Square Hospitality Group, New York, 2018
The Manhatta is the house Manhattan from Manhatta, Union Square Hospitality Group's restaurant sixty floors above Lower Manhattan. Rye and sweet vermouth get a quarter ounce of demerara syrup and two dashes of Jerry Thomas' Own Decanter Bitters, and orange oil goes over the rim before the coins are discarded. The demerara rounds out the rye, and the orange lifts the whole drink. Built for the last cold weeks of winter.

Danny Meyer's Union Square Hospitality Group opened Manhatta on July 17, 2018, on the 60th floor of 28 Liberty Street in the Financial District, with beverage director Matt Whitney, formerly of The Modern, running the bar. The restaurant's signature cocktail took the classic Manhattan and added demerara syrup. The opening version used New York Distilling Company's Ragtime Rye with Carpano Antica.

Batching dilution
When you batch, there's no ice melting in a shaker, so you add the water yourself: 18% for spirit-forward drinks, 25% for shaken ones.
